- 1packets microwave rice
- 500grams fresh tuna
- 1/2 green chilli
- 1/2 red chilli
- 1/2 cup coriander leaves
- 4 sprig thai basil
- 400milliliter can coconut milk
- 1 fresh lime
- 24 snow peas
- 4 pappadums

When you're short on time, make this quick, easy and tasty green curry with tuna recipe.

Method
Step 1 of 7
Cut tuna into 2cm chunks slice chilli into small pieces and remove tops and strings from the side of the snow peas set all aside on a plate ready to go.

Heat coconut milk gently in a frying pan on a low heat don't boil.
Step 3 of 7
Add tuna and green curry paste and simmer slowly on a low heat don't not boil (this prevents the tuna from breaking up).
Step 4 of 7
Once tuna is cooked through add fresh snow peas and a squeeze of fresh lime to balance a low to simmer just until the snow peas are tender.
Step 5 of 7
Follow instructions on rice and heat in the microwave or you could just cook some normally I like the mixed brown wild and red rice it gives good nuttiness.

Serve on a plate dressing the curry with freshly sliced chilli coriander leaves and fresh Thai basil.

Cook pappadums I like to do them in the microwave heaps healthier than in oil.
