- 1 chicken breast, sliced
- 2tablespoons green curry paste
- 1/2 capsicum, sliced
- 1 can coconut milk
- 1 onion, sliced
- 1/2 head broccoli, florets
- 1 handful beans (or snow peas)
- 1 bok choy
- 1/2packets vermicelli noodles
- 1tablespoons oil

Description
A quick, easy and tasty mid week dinner.
Instruction tip
Use up whatever vegetables you have in the fridge. Serve with rice if preferred. Add less or more curry paste to suit desired heat.
Method
Step 1 of 4
Prep ingredients and soak noodles as per packet method.
Step 2 of 4
Stir fry veg lightly in wok and remove. Leave out the bok choy, it only needs to go in at the very end, for a minute.
Step 3 of 4
Add paste, cook off for 1 minute and add can of coconut cream. Bring to the boil and add the chicken. Simmer until chicken is nearly done.
Step 4 of 4
Add veg back into wok, add bok choy and simmer for a couple of minutes. Serve with the noodles.
