  • 1tablespoons vegetable oil
  • 3 chicken thigh fillets, diced
  • 80grams broccoli, cut into bite-sized florets
  • 80grams chestnut mushrooms, halved
  • 50grams snow peas, sting removed if you like
  • 40grams bamboo shoots, finely sliced
  • 300milliliter coconut milk
  • 2tablespoons Thai basil, torn (optional)

Method

Step 1 of 5

Heat the oil in a pan and fry the extra chilli if you would like added heat, for 10 seconds.

Step 2 of 5

Add the chicken pieces and sear all over.

Step 3 of 5

Add the vegetables, except the bamboo shoots and sauté for 4 minutes.

Step 4 of 5

Add the green paste and stir well. Add the coconut milk, bamboo shoots, the aromatics from the spice pack and Thai basil (if using) and bring to a simmer. Cook until the vegetables and chicken are done - around 3-4 minutes more.

Step 5 of 5

Taste, adjust seasoning and sweetness and serve.
