  • 1 clove garlic, crushed

  • 1teaspoons garlic powder
  • 1teaspoons ground ginger
  • 1/2teaspoons black pepper
  • 2 cup jasmine rice
  • 1/4 cup Ayam light soy sauce
  • 2teaspoons brown sugar
  • 2tablespoons dark soy sauce
  • 1tablespoons vegetable oil
  • 1.20kilograms beef brisket

Method

Step 1 of 5

In a small bowl combine spices and brown sugar. Place brisket into a roasting dish with the base lined with foil. Rub spice mixture onto beef covering completely, brush over soy sauce and pour stock around meat.

Preheat oven to 160°C (140° fan-forced), cook brisket covered for 2 to 21/2 hours, or until meat is tender, basting regularly with juices. Remove from oven and rest for 20 minutes before serving.

Meanwhile, cook rice according to packet instructions.

Combine oyster sauce, soy sauce, garlic and ginger in a small dish. Heat oil in a wok or large non-stick fry pan over high heat. Add broccolini and carrot and stir-fry for 1 minute before adding the sauce. Stir fry for a further 1 to 2 minutes or until just tender.

Step 5 of 5

Slice the beef and serve with vegetables, rice and coriander leaves.
