  • 2 bay leaves
  • 1 large carrot, unpeeled, cut into 5cm pieces
  • 1 brown onion, unpeeled, chopped
  • 2 sprig parsley
  • 6 whole black peppercorns
  • 1kilograms chicken wings
  • 4 sprig thyme
  • 1 stick celery, roughly chopped

Method

Step 1 of 3

Place chicken wings in a large stockpot. Cover with 12 cups cold water. Bring to the boil, uncovered, over medium heat.

Step 2 of 3

Add onion, carrot, celery, bay leaves, thyme, parsley and peppercorns. Gently simmer, uncovered, for 3 hours. Occasionally skim foam and any fat from surface. Set aside to cool.

Step 3 of 3

Strain, discarding solids, into a bowl. Cover and refrigerate overnight. Remove fat before using (see tip).
