Description

Wondering how to make chicken stock? This easy chicken stock recipe is ready in two steps. Use it to add flavour to soups and rice, and as a base for braising.

Method

Step 1 of 2

Heat oil in a large, deep saucepan over medium heat. Add onion, carrot and celery, then cook, stirring, for 5 minutes or until softened. Add chicken, peppercorns, bay leaf and 3 litres water and bring to the boil. Reduce heat to low and simmer for 2 hours, skimming foam from surface. Allow to cool slightly.

Step 2 of 2

Remove chicken or bones from pan. Shred chicken and store for another use. Strain stock, discarding solids. Season well with salt.
