- 1teaspoons baking powder
- 2 cup self-raising flour
- 1 cup mixed dried fruit
- 20grams butter (melted)
- 1 cup milk
- 1/2teaspoons vanilla extract
- 1/2 cup honey
- 1 cup plain Greek-style yoghurt (plus extra to serve)
- 2 free range eggs (lightly beaten)
- 2tablespoons caster sugar
- 2tablespoons dark rum

Method
Step 1 of 4
Place dried fruit in a bowl. Add rum, then stand for 2 hours to soak.
Step 2 of 4
Sift flour and baking powder into a large bowl. Stir in sugar, then add egg, yoghurt, milk, fruit mixture and vanilla, gently stirring to combine.
Step 3 of 4
Heat a large frying pan over high heat, then brush with butter. Drop 2 tbs batter into pan and spread to form a 6.5cm round. Repeat to make 2 more pikelets. Cook for 2 minutes or until bubbles start to form on surface. Turn over and cook for a further 2 minutes or until golden and cooked through. Transfer to a wire rack. Repeat with remaining butter and batter to make a total of 30.

Serve pikelets dolloped with extra yoghurt and drizzled with honey.
