  • 1L chicken stock, hot, made with 2 stock cubes

Description

Earthy Jerusalem artichokes make a rich and hearty soup impressive enough for a dinner party entree.

Method

Step 1 of 2

Heat the butter in a large, deep pan and cook the onions and artichokes for 10 minutes until soft. Add the garlic and cook for 2 minutes.

Step 2 of 2

Pour over the stock, bring to the boil, reduce the heat and simmer for 15 minutes. Pour into a food processor, add the cream and blend until smooth.
