- 1 celeriac, peeled and roughly cut
- 400grams parsnips, peeled and roughly chopped
- 500grams pumpkin, peeled and roughly cut
- 1 brown onion, peeled and roughly cut (large)
- 400milliliter coconut cream
- 1 bunch coriander
- 1 cup basmati rice, cooked
- 1/2 cup sweet chilli sauce
- 3 clove garlic, crushed
- 2 limes, zested, juiced
- 1teaspoons cumin powder
- 1teaspoons chopped chilli
- 2teaspoons smoked paprika
- 2 inches fresh ginger, peeled and roughly cut
- 1/2 cup tomato paste
- 1/4 cup macro almond spread
- 2teaspoons rice bran oil
- 1L vegetable stock
- 2 carrots, peeled and roughly cut (medium)

Method
Step 1 of 7
Assemble all your ingredients. For the best results ensure your rice is not over cooked and freshly cooked and fluffy in texture.
Step 2 of 7
Sauté all the vegetables, garlic and spices and tomato paste.
Step 3 of 7
Add all the ingredients except the coriander and sweet chilli sauce.
Step 4 of 7
Simmer until all the vegetables are cooked through and tender.
Step 5 of 7
Blitz with a stick blender with the well washed coriander, adjust seasoning.
Step 6 of 7
Serve into bowls.
Step 7 of 7
Stir the hot steamed rice through the soup and then swirl each one with the sweet chilli sauce and add fresh chopped parsley to serve.
