  • 250grams fresh mushrooms, thinly sliced
  • 2 bacon rashers, finely chopped
  • 1 small onion , thinly chopped
  • 1 clove garlic, smashed, finely chopped
  • 2 cup chicken stock (or vegetable)
  • 1/2 cup cream (extra to serve if desired)
  • 1 pinch salt (to taste)
  • 1tablespoons olive oil

Description

A lovely warming soup to enjoy for those chilly winter nights.
Instruction tip
I make homemade croutons to serve on the side. Also delicious with fresh crusty bread.

Method

Step 1 of 6

Heat olive oil in a medium size pan on medium heat, add onion, garlic and bacon, cook stirring for 5 minutes or until onion has softened and bacon is cooked, but not crispy.

Step 2 of 6

Add mushrooms, and cook stirring for 5 minutes or until mushrooms are tender.

Step 3 of 6

Add stock, bring to the boil, then simmer for 10 minutes on low or until soup thickens slightly.

Step 4 of 6

Set aside to cool for a couple of minutes.

Step 5 of 6

Using a stick blender, blend soup until smooth. Stir in the cream, season if desired. Reheat on a very low heat if required.

Step 6 of 6

Ladle soup into serving bowls, add extra cream on top if desired. I also add a fresh grinding of pepper as I love pepper.
