  • 2teaspoons olive oil
  • 1 onion, peeled and diced
  • 2teaspoons curry powder
  • 420grams canned corn, drained
  • 2 cups chicken broth
  • 1 cup whipped cream, save 4 tsp
  • 1 pinch pepper (to taste)
  • 1 pinch salt (to taste)

Description

A warm and creamy soup, perfect for a weeknight meal. Serve with warm pita or toasted baguette.

Method

Step 1 of 3

Add olive oil to a medium pot over medium heat. Add the diced onion and the curry powder and stir until translucent. Add the corn to the onion and sauté for 1 minute.

Step 2 of 3

After 1 minute, add the chicken broth and the whipping cream. Give it a good stir and let it simmer at medium to low temperature for 10 minutes. Season with salt and pepper to taste.

Step 3 of 3

Puree the soup using a blender or a food processor.
