- 1tablespoons canola oil
- 1 medium yellow onion, peeled, diced medium
- 3 cloves garlic, peeled, chopped
- 400grams frozen mixed vegetables, thawed
- 4 cups vegetable stock
- 1tablespoons thyme, fresh, chopped
- 1 pinch salt (to taste)
- 1 pinch pepper (to taste)
- 150grams tri colored quinoa, cooked as per packaged instructions
Description
Quinoa and frozen vegetables make this a quick and filling homemade soup, for an easy meal for lunch or a light dinner.
Method
Step 1 of 2
Add the canola oil into a large pot place onto medium-heat. Add the onions to saute for 5 minutes. Stir in the garlic cooking for 30 seconds before add the mixed vegetables and pouring in the vegetable stock and thyme. Reduce the heat simmering the soup for 15 minutes until the vegetables are soft and fully cooked.

Season the soup with salt and pepper mixing in the quinoa into the soup, ladle into bowls when ready to eat.
