- 2tablespoons coriander, chopped

Description
This simple and easy sweet potato soup is blended with fragrant ginger and coconut milk for richness, perfect for a cold day.
Method
Step 1 of 4
Add the oil to a pot setting it to medium heat on the stovetop to heat up for 1 minute. Add the onions to sweat for 2 minutes before adding in the garlic and ginger cooking 30 seconds.
Step 2 of 4
Stir in the sweet potatoes, chicken stock and coconut milk. Once the soup starts to boil reduce the heat and simmer for 30 minutes until the potatoes are cooked.
Step 3 of 4
Remove the soup from the heat letting it cool for a few minutes before adding it to a blender, blending the soup until smooth.
Step 4 of 4
Season with chopped coriander, salt and pepper before placing into warm bowls.
