  • 150grams chorizo, sliced thinly

  • 3 cloves garlic, peeled and minced
  • 1 pinch red pepper flakes (to taste)
  • 3 1/4 cup chicken stock
  • 3 potatoes, peeled and cut into cubes
  • 1 cabbage, shredded

Description

On a cold night, a piping hot bowl of this hearty, smoky and savoury soup will definitely warm you up.
Instruction tip
You may add a can of drained and rinsed white beans for a heartier soup.

Method

Step 1 of 3

Heat 1 tablespoon of oil and fry the chorizo slices in a pot over medium heat. Move the sausages to the side and add the rest of the oil and the onions to the pan and cook until translucent. Stir in the garlic and 0.5 teaspoon of the red pepper flakes.

Step 2 of 3

Tip in the stock and potatoes and bring to boil. Lower the heat and simmer until the potatoes are tender, for 10-15 minutes.

Step 3 of 3

Add the cabbage and simmer until cabbage wilts for about 5 to 10 minutes. Serve with a sprinkling of more red pepper flakes. You may also serve with a lemon wedge if desired.
