- 2 tomatoes, cut into quarters
- 2 white onion, peeled and sliced
- 2 red capsicum, sliced
- 4tablespoons olive oil
- 1/2teaspoons salt
- 1/2teaspoons pepper
- 1-NaNmilliliter vegetable stock
- 1teaspoons sugar
- 1/2teaspoons Italian seasoning
- 60grams goats cheese
- 4 Italian bread
Description
The vibrant flavours of tomato, capsicum and onion make a delightfully sweet soup which pairs perfectly with a creamy goats cheese panini.
Method
Step 1 of 3
Preheat the oven to 200°C/180°C fan-forced. In a baking sheet mix the tomatoes, white onions, red capsicum and 2 tablespoon of olive oil. Season liberally with salt and pepper. Roast just until starting to brown, about 40 to 50 minutes.
Step 2 of 3
Transfer the roasted tomatoes into a saucepan. Tip in the vegetable stock, sugar and Italian seasoning. Puree the mixture using a stick blender. Heat the soup until just warmed through.
Step 3 of 3
Spread the goats cheese on the Italian bread to make two sandwiches. Brush the remaining oil on the surface of the sandwich. Heat the sandwich in the panini press.
