- 1teaspoons ground cumin
- 1 pinch salt
- 1 pinch pepper
- 2tablespoons pumpkin seeds, toasted
- 6 cherry tomatoes, sliced
- 1/2teaspoons smoked paprika

There is no cooking required for this chilled rich and creamy avocado soup recipe that's great for cooling you down.
Method
Step 1 of 2
Add the chicken stock, avocadoes, lime juice, coriander, scallions, garlic and cumin to a blender, blend until smooth seasoning with salt and pepper before placing into the fridge to chill for 30 minutes.
Step 2 of 2
Portion into bowls garnishing with toasted pumpkin seeds, sliced cherry tomatoes and a dash of smoked paprika.
