- 1 medium white onion, peeled and chopped
- 4 cloves garlic, peeled and mashed
- 3 1/4 cups vegetable stock
- 1 large potato, peeled and cut into chunks
- 100grams couscous
- 100grams peas
- 4tablespoons tomato paste
- 160grams goats cheese, crumbled
- 4 medium eggs
- 1 pinch cracked black pepper

Description
A Maltese style soup with grains and root veg with a salty goats cheese and runny egg.
Method
Step 1 of 5
Heat up a large saucepan to a medium heat and add the canola oil.
Step 2 of 5
Add the onion and garlic to the pan and fry for 3 minutes.
Step 3 of 5
Add the vegetable stock and potato to the pot and allow to simmer for 10 minutes.
Step 4 of 5
Add the couscous, peas and tomato paste to the pot and allow to simmer for a further 10 minutes.
Step 5 of 5
Lastly add the crumbled cheese and then crack the eggs on top, season with pepper. Cover the pot, allow to sit for 15 minutes and then serve.
