  • 1tablespoons canola oil
  • 1 medium white onion, peeled and chopped
  • 4 cloves garlic, peeled and mashed
  • 1 large potato, peeled and cut into chunks
  • 80grams sweet corn
  • 400grams mixed white beans, drained
  • 100grams couscous
  • 100grams peas
  • 3 1/4 cup vegetable stock
  • 4tablespoons tomato paste
  • 1 pinch salt
  • 1 pinch cracked black pepper

Description

A Maltese influenced soup that is full of earthy flavours.

Method

Step 1 of 5

Heat up a large saucepan to a medium heat and add the canola oil.

Step 2 of 5

Add the onion and garlic to the pan and fry for 3 minutes.

Step 3 of 5

Add the vegetable stock, potato and corn to the pot and allow to simmer for 10 minutes.

Step 4 of 5

Add the couscous to the pot and allow to simmer for a further 10 minutes.

Step 5 of 5

Lastly add the rest of the ingredients and cook together for 15 minutes, stirring occasionally before serving.
