  • 1 onion, diced
  • 2 garlic, minced
  • 1.50L vegetable stock
  • 2tablespoons fajita seasoning
  • 1 can corn, drained and rinsed
  • 1 can blackbeans, drained and rinsed
  • 1tablespoons jalapenos, diced
  • 1/2 red capsicum

Method

Step 1 of 3

Brown onion and garlic in oil over medium heat, cook for 5 mins.

Step 2 of 3

Add stock and Fajita seasoning, bring to boil. Once it is boiling, reduce heat to med-low and simmer, uncovered, for 10 mins.

Step 3 of 3

Add red capsicum, jalapenos, beans and corn, cook for 15 mins.
