For the matzo balls
- 2 medium eggs, free range & seperated
- 1/3 cup water
- 1/4 cup canola oil (plus 4 extra tsp)
- 100grams matzo meal
For the soup
- 1kilograms kosher chicken breasts, diced
- 2tablespoons olive oil
- 2 medium carrots, peeled and chopped
- 3 medium shallots, chopped
- 3 cloves garlic, crushed
- 1/3 cup vegetable stock
- 1tablespoons parsley, finely chopped
- 1 pinch salt
- 1 pinch pepper

Description
A heart warming kosher chicken soup, made all the more filling by the matzo ball.
Method
Step 1 of 7
In a large pot on a medium heat, fry the chicken pieces with the olive oil for 10 minutes while turning regularly. Add the chopped carrots, shallots and garlic and continue to fry for a further 5 minutes while mixing.

Now add the vegetable stock to the pot, lower the heat, cover and allow to simmer for 15 minutes. Remove from the heat and leave in the fridge overnight.

To make the matzo balls, separate the eggs and whip the eggs whites in a bowl to peaks. In a separate bowl, beat the eggs yolks with the water and the oil, then slowly add the matzo meal into the mix while combining.

Now incrementally fold in the egg whites into the mixture and allow to stand for 15 minutes. Now prepare the mixture into small balls and set to one side.

Heat up a pot of water with some salt to the boil, then place the matzo balls in the water and cook for 20 minutes, then remove from the water and set to one side.

Remove the soup mix from the fridge and take away the skin from the top. Blend the soup mix until smooth and then heat up on a medium heat while stirring for 5 minutes.

Add the matzo balls to the soup and cook for 2 more minutes before serving with salt and pepper to taste.
