  • 400grams sweet potato, washed, peeled and chopped into small cubes
  • 3/4 cup coconut milk
  • 1tablespoons canola oil
  • 1L vegetable stock
  • 2 medium white onion, peeled and chopped
  • 2 cloves garlic, peeled and chopped
  • 20grams ginger, peeled and chopped

Description

This soup is quite aromatic and smooth with a light spice.

Method

Step 1 of 3

Heat up a large pot to a medium heat with the canola oil and fry the cubed potatoes with the onion, garlic and ginger for 6 minutes while tossing.

Step 2 of 3

Add the rest of the ingredients apart from the chives and allow the mixture to simmer for 15 minutes while stirring occasionally.

Step 3 of 3

Remove the soup from the heat and blend using a hand blender.
