- 1/2 onion
- 1 medium sized potato , chopped
- 2 clove garlic
- 1 sprig rosemary
- 2 cup chicken stock
- 1/4 cup thickened cream
- 2 stick cabanossi
- 1teaspoons salt and pepper (to taste)
- 2teaspoons parsley flakes (to sprinkle)

Description
Pumpkin and potatoes are already thick and creamy but adding the cream will enhance it. This soup can be a main meal when served with garlic bread. Enjoy!

Method
Step 1 of 8
Prepare ingredients by peeling and chopping pumpkin, potatoes, garlic and onion. Slice cabanossi in smaller pieces and place liquid ingredients in measuring cups

Fry cabanossi for 3 minutes then set aside. It will be used again later. (Disregard cabanossi to make it a vegetarian dish)

In the same pot, put the pumpkin, potatoes, onion and garlic. (The fat from the cabanossi will add flavour)
Step 4 of 8
Remove rosemary leaves from sprig then add to pot. Add chicken stock.
Step 5 of 8
Simmer over medium heat until vegetables are tender.

Take off heat. Blend until smooth. Using a stick blender can give you a better consistency.
Step 7 of 8
Add cream and stir through.

Season with salt and pepper.
Add cabanossi and sprinkle with parsley flakes (if desired)
