Description
This rich and slightly sweet pumpkin and apple soup is packed with autumnal flavour.
Method
Step 1 of 3
Heat the butter in a large, deep pan and cook the onions for 6-8 minutes until soft. Add the garlic and mixed spice and cook for 2 minutes.
Step 2 of 3
Stir in the pumpkin and apple and cook for 3-4 minutes. Add the chicken stock and bring to the boil. Reduce the heat and simmer for 15 minutes with the lid on. Remove from the heat and blend until smooth with an immersion blender.
Step 3 of 3
Heat the olive oil in a large pan on medium heat and fry the sage leaves for 2 minutes on each side, until crispy. Drain on kitchen paper. Serve the soup with crispy sage leaves and a drizzle of sage oil on top.
