Potato, Leek & Kale Soup

- 4 medium potato, peeled and chopped
- 1 large leek, trimmed and sliced
- 2 cloves garlic, peeled and chopped
- 1 medium white onion, peeled and chopped
- 2 1/3 cups vegetable stock
- 2tablespoons canola oil
- 150grams kale
Description
A light soup to enjoy as a starter or appetiser with a full earthy flavour.
Method
Step 1 of 3
Heat up a pot to a medium heat with the canola oil. Cook the leek, garlic and onion and fry up for 5 minutes while tossing.
Step 2 of 3
Add the potatoes and fry up for a further 5 minutes while mixing. Add the vegetable stock and kale and allow to simmer for 25 minutes, stirring occasionally.
Step 3 of 3
Remove from the heat and hand blend to your desired consistency before serving.
