  • 4 streaky bacon, chopped
  • 1teaspoons canola oil
  • 1 ltr vegetable stock
  • 1 medium white onion, peeled and chopped
  • 1 stalk celery, leaves removed and chopped
  • 3 cloves garlic, peeled and chopped
  • 250grams broadbeans, store bough and de-shelled
  • 100grams peas
  • 1tablespoons thyme, chopped
  • 1 pinch salt
  • 1 pinch pepper

Description

A lightly seasoned and creamy textured soup has a delightful crunch and saltiness with the addition of the bacon.

Method

Step 1 of 3

Heat up a pan to a medium heat with the oil and fry the bacon for 4 minutes turning halfway and then remove from the pan. Add the butter, chopped onion, celery, and garlic to the pan and fry for 6 minutes while mixing.

Step 2 of 3

Add the rest of the ingredients, lower the heat and allow to simmer for 10 minutes. Remove from the heat and using a hand blender, blend to a smooth consistency.

Step 3 of 3

Serve with the chopped bacon, a choice of garnish and breads if desired.
