  • 1 medium leek, diced
  • 1 medium white onion, peeled and diced
  • 1 2/3 cup vegetable stock
  • 50grams bacon, chopped
  • 30grams butter
  • 1 pinch salt
  • 1 pinch pepper
  • 1 sprig mint

A starter or appetiser that is full of flavour and crunch.

Method

Step 1 of 4

Heat up a pot to a medium heat with the butter. Cook the bacon for 3 minutes until lightly browned.

Step 2 of 4

Add the diced leek and onion to the pot and cook for a further 3 minutes while stirring. Remove half of the mix from the heat and keep to one side for garnish.

Step 3 of 4

Add the vegetable stock, peas and 2 mint leaves and cook for a further 3 minutes. Remove from the heat and using a hand blender, blitz into a soup consistency.

Step 4 of 4

Serve with salt and pepper to taste and garnish with the chopped bacon and veg and a mint leave.
