Simple Pea & Mint Soup

- 250grams frozen peas, such as petit pois
- 1 2/3 cup hot vegetable stock
- 1 handful fresh mint leaves, roughly chopped
- 3-4 fresh thyme stalks, leaves picked
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1-2tablespoons crème fraîche
- 1 pinch nutmeg, freshly grated
Method
Step 1 of 3
Put the peas in a bowl, then pour over boiling water and leave to stand for about 5 minutes. Drain.
Step 2 of 3
Using a blender, whiz the peas, stock, and herbs until smooth and combined. You may have to do this in batches. Add more stock if the soup is too thick. Season well with salt and black pepper, and whiz again.
Step 3 of 3
To serve, stir through the crème fraîche (if using), and top with a pinch of nutmeg. Serve hot or cold with crusty bread.
