  • 1 avocado
  • 1 brown onion, finely chopped
  • 1/4 cup continental parsley leaves
  • 2 bunch broccolini, finely chopped
  • 2 limes, halved
  • 120grams baby spinach leaves
  • 50grams feta, crumbled
  • 1tablespoons olive oil

Method

Step 1 of 2

Heat oil in a large saucepan over medium heat. Add onion and cook for 5 minutes or until soft. Add broccolini, stock and 1 cup water. Increase heat to medium-high and simmer for 15 minutes or until tender. Add spinach and stir until wilted.

Step 2 of 2

Remove from heat, add avocado flesh and parsley. Blend with a stick blender or in a food processor until smooth. Reheat gently over low heat, if needed. Top soup with feta and serve with lime halves.
