  • 4 cup plain flour
  • 30grams butter
  • 1 pinch white sugar
  • 400grams swiss brown mushrooms, sliced
  • 1/3 cup extra virgin olive oil
  • 40grams baby rocket leaves
  • 125grams goats cheese
  • 1 sprig rosemary, leaves stripped
  • 1 1/2 cup mozzarella, grated
  • 2 cloves garlic, crushed

Method

Step 1 of 4

Combine yeast, 1 cups warm water and sugar in a bowl and set aside for 5 minutes until yeast has dissolved. Meanwhile, combine flour and 1 tsp salt in a large bowl. Make a well in the centre. Pour in yeast mixture and 1/4 cup of the oil and stir well to combine.

Turn out onto a floured surface. Knead for 10 minutes until smooth. Grease a bowl using half of the remaining oil. Add dough to bowl and turn to coat dough all over with the oil. Cover with plastic and set aside in a warm place to rise for 30 minutes or until dough doubles in size.

Meanwhile, heat a frying pan over medium-high heat. Add the butter and when foaming, add mushrooms and rosemary. Toss for 2 minutes. Add garlic and cook for 2 minutes or until golden. Remove from heat. Season to taste.

Step 4 of 4

Preheat oven to 250°C and preheat a pizza stone, if you have one. Knead dough again on a floured surface. Divide into 3 equal portions. Roll out each to a 20cm round and transfer to a pizza tray. Brush with remaining oil. Top with mozzarella, mushrooms and goat’s cheese. Bake for 10 minutes or until golden and cheese has melted. Top with rocket to serve.
