  • 4 cloves garlic, crushed

  • 270grams pkt garlic bread slices

Description

Try this easy pumpkin soup recipe for a quick and comforting meal. Ready in just 30 minutes, this version amps up the flavour with the addition of smoky pepitas.

Method

Step 1 of 3

Heat a large saucepan over medium heat. Toast pepitas, stirring, for 3 minutes or until golden. Add paprika and toss to coat. Transfer to a plate.

Step 2 of 3

Dissolve stock cubes in 2 cups boiling water in a jug. Heat oil in same pan over medium-high heat. Cook pumpkin, stirring, for 2 minutes. Add garlic, stock mixture, 1/2 cup cream and 1 cup water, then bring to the boil. Reduce heat to low and simmer, covered, for 20 minutes or until pumpkin is tender.

Meanwhile, cook garlic bread according to packet instructions. Using a stick blender, puree pumpkin mixture until smooth. Season. Divide soup among bowls. Swirl remaining cream through soup and scatter over pepitas. Season with pepper and serve with garlic bread.
