  • 25grams butter
  • 180grams bacon, chopped
  • 1 medium onion, chopped
  • 1L chicken stock or vegetable stock
  • 1 potato
  • 500grams pumpkin, cubed
  • 1teaspoons crushed garlic
  • 1teaspoons ginger
  • drizzle cream

Method

Step 1 of 4

In a large pot heat the oil and butter. Cook onion over low heat for five minutes.

Step 2 of 4

Add chopped bacon, garlic and ginger. Cook a further 10 minutes stirring occasionally.

Step 3 of 4

Increase the temperature to medium. Add stock, pumpkin and potatoes ( 2cm cubes work well). Salt and pepper. Once it boils stir well. Reduce heat to a simmer. Cover with a lid and simmer for 40 minutes.

Step 4 of 4

Remove from heat. Allow to cook slightly. Blend soup to desired consistency. If too thick add a little extra stock. Serve in a bowl with a drizzle of cream on top.
