- 3tablespoons olive oil
- 1.50L beef stock
- 800grams onions, peeled and thinly sliced
- 1/2teaspoons salt
- 1teaspoons sugar
- 6 cloves garlic, peeled, divided
- 2tablespoons all purpose flour
- 1 cup white wine
- 4 whole wheat bread
- 8 slices gruyere cheese
- 8 slices mozzarella
Description
This savoury onion soup with garlicky cheese toast is a match made in lunch heaven.
Method
Step 1 of 3
Heat the 2 tablespoons of olive oil in a large stock pot over very low heat and saute the onions. Cook the onions while continuously stirring for 30 minutes. Season with salt and sugar. Continue to cook while stirring constantly for another 30 minutes. Minced 3 cloves of garlic and mix it with the onions. Cook for an additional minute.

Tip in the flour and mix it. Gradually mix in the wine. Turn up the heat to medium. Once combined, stir in the hot stock. Bring to a bubble, then gently simmer for 20-30 minutes.

Brush the remaining olive oil on the bread and nonstick pan over medium low heat until lightly browned. While hot, rub the garlic cloves on the surface of the bread. Top each slice with gruyere and mozzarella slices. Put two slices together to make one sandwich. Toast the sandwich again until just melted. Cut the sandwich diagonally in half. Serve the toastie with a bowl of warm onion soup.
