  • 50grams butter
  • 6 medium onions, peeled and sliced
  • 5 cloves garlic, peeled and minced
  • 1tablespoons dark brown sugar
  • 1 1/4 cup stout
  • 1.20L chicken stock, hot, made with 2 stock cubes
  • 4 slices crusty bread
  • 60grams Irish cheddar, grated

Description

This rich Irish onion soup is enriched with stout for depth of flavour and is worth the effort of slowly caramelising the onions.

Method

Step 1 of 3

Melt the butter in a large, deep pan on medium heat. Add the onions and cook gently with the lid on, stirring occasionally, for 1 hour. Stir in the garlic and cook for 5-6 minutes, add the sugar and cook, stirring, for 8 minutes to caramelise the onions.

Step 2 of 3

Pour in the stout and simmer for 5 minutes until evaporated, then add the stock and simmer for 15 minutes.

Step 3 of 3

Top each slice of bread with grated cheddar. Divide the soup between bowls, place the cheesy bread into the bowl and melt under a hot grill for 2-3 minutes.
