  • 200grams potato, peeled and diced
  • 200grams carrot, peeled and sliced

  • 800grams sauerkraut, drained
  • 2tablespoons sour cream
  • 2tablespoons plain flour
  • 2tablespoons dill, fresh, chopped

Description

These Ukrainian pork and sauerkraut soup is the ultimate warming winter food.

Method

Step 1 of 5

Place the pork, bay leaf, peppercorns and chopped onion in a large, hob-safe soup pan. Pour over 2 litres of water and bring to the boil. Skim excess fat off the surface with a slotted spoon.

Step 2 of 5

Reduce the heat and simmer for 1.5 hours, until the meat is falling off the bones. Remove the ribs and leave to cool, then remove the meat from the bones and chop as necessary.

Step 3 of 5

Add the potatoes, carrots and sauerkraut to the pot, bring to the boil and reduce the heat. Cook for 25 minutes.

Step 4 of 5

Whisk the sour cream with the flour in a medium bowl and add 2-3 tablespoons of soup, whisking until smooth. Pour this into the pot and whisk until it thickens the liquid.

Step 5 of 5

Place the shredded meat back into the soup and cook until warmed through, stir in chopped dill and serve.
