  • 1tablespoons oil
  • leftover roast lamb , diced
  • 1 onion
  • 1 carrot
  • 2 clove clove
  • 2teaspoons moroccan seasoning
  • 1 can tomatoes
  • 1L chicken stock
  • 1 can chickpeas, drained, rinsed

Method

Step 1 of 5

Heat oil over medium-high heat.

Step 2 of 5

Brown carrots, onions and garlic - approximately 5mins.

Step 3 of 5

Add tomatoes, stock, seasoning, lamb and chickpeas, heat until boiling - approximately 15 mins.

Step 4 of 5

Reduce heat and simmer for approximately 10 mins.

Step 5 of 5

Tip: Depending on how much room I have in the freezer, I often reduce the amount of water, so I can fit more into my freezer. When I take out a container for reheating - I will add a cup of water to it.
