  • 400grams cooked turkey
  • 100grams mushrooms, washed, drained and halved
  • 1 medium white onion, peeled and diced
  • 2 medium capsicum, de-seeded and chopped
  • 4 cloves garlic, peeled and diced
  • 1 1/4 cup coconut milk
  • 1/3 cup passata
  • 2teaspoons garam masala
  • 2teaspoons cumin
  • 1tablespoons canola oil
  • 1teaspoons turmeric powder

Description

This curry is creamy, aromatic and packed full of eastern flavours.

Method

Step 1 of 2

Heat up a large pot to a medium heat with the canola oil and fry the onion, garlic and mushrooms for 5 minutes. Add the capsicum to the pan with the spices and cook for a further 5 minutes.

Step 2 of 2

Add the passata and coconut milk. Chop the cooked turkey and add that to the pot also and allow everything to simmer for 15 minutes. Serve with a choice of condiments.
