- 600grams chicken breasts, diced
- 2 1/3 cups coconut milk
- 100grams broccoli, florets washed and drained
- 100grams snow peas, washed and drained
- 100grams green beans, washed and drained
- 4 leaves kaffir lime leaves, finely chopped
- 1 medium white onion, peeled and diced
- 3 cloves garlic, peeled and chopped
- 1 medium red chilli, chopped
- 1 medium green chilli, chopped
- 1teaspoons tumeric powder
- 1teaspoons cumin
- 2teaspoons coriander, chopped
- 1tablespoons ginger, chopped
Description
A creamy and aromatic curry with a smooth finish and a delicate balance of spices.
Method
Step 1 of 3
Fry the chicken on a large non-stick pot on medium heat for 4 minutes while turning. Add the herbs and spices to the pan and fry while stirring for another 3 minutes.
Step 2 of 3
Add the onion, garlic broccoli, snow peas, green beans and chillies and continue to fry for a further 2 minutes.
Step 3 of 3
Add the coconut milk and the rest of the ingredients and allow to simmer while covered and stirring occasionally for 20 minutes. Remove the lid and cook while stirring for 10 minutes to reduce the sauce before serving.
