- 175grams easy-cook long-grain rice
- 250grams tenderstem broccoli, trimmed and cut into 7 cm lengths
- 3tablespoons vegetable oil
- 1 large red onion, sliced
- 1 bunch spring onions, trimmed and roughly chopped
- 250grams cooked peeled prawns
- 1 lemon, finely grated rind and juice
- 3tablespoons light soy sauce
- 1 pinch salt

Description
This prawn and broccoli stir-fry recipe fuses lemon and soy sauce for a light yet aromatic dish cooked with rice.
Method
Step 1 of 3
Place one cup of lightly salted water to the boil in a saucepan, add the rice and cover with a lid and cook for 8 minutes. Add the broccoli to the pan and cook with the rice for a further 2-3 minutes until both are tender.
Step 2 of 3
Meanwhile, heat the oil in a large, heavy-based frying pan or wok and cook the onion over a medium-high heat, stirring frequently, for 5 minutes until softened. Add the spring onions and prawns and stir-fry for 4 minutes.
Step 3 of 3
Add the lemon rind and juice and soy sauce to the pan and stir well, then add the rice and broccoli and stir-fry for 1 minute until all the ingredients are piping hot and well mixed. Serve immediately.
