- 100grams fried crunchy noodles
- 1/3 cup fish sauce
- 1/2 green cabbage, finely shredded
- 2 medium carrots, finely shredded
- 1-2 red chillis, seeded, finely chopped
- 2tablespoons coriander leaves, chopped
- 2tablespoons mint leaves, chopped
- 1 small onion, finely sliced
- 1 free-range BBQ roast chicken
- 1/4 cup lime juice
- 1-2tablespoons palm sugar, grated
Method
Step 1 of 3
Remove meat from chicken and discard skin and bones. Shred chicken meat. In a large bowl, mix together fish sauce, lime juice, sugar and chilli. Add cabbage, carrot and onion. Mix well.
Step 2 of 3
Toss chicken with salad. Cover and chill for at least 30 minutes.
Step 3 of 3
Add herbs and noodles and serve.
