- 1/4teaspoons white pepper
- 400grams hokkien noodles (to serve)
- 100grams snow pea sprouts, trimmed
- 1 long red chilli, seeds removed, finely chopped
- 100grams sugar snap peas, halved diagonally
- 5milliliter virgin olive oil spray
- 1/4 cup rice wine vinegar
- 1 lime juiced
- 600grams chicken breast stir-fry strips
- 1teaspoons sea salt flakes
- 1tablespoons caster sugar
- 2 garlic cloves, crushed

Method
Step 1 of 6
Soak 12 bamboo skewers in cold water.
Step 2 of 6
Combine vinegar, lime juice, caster sugar and salt in a small pan. Stir over a low heat until sugar dissolves. Transfer to a ceramic dish and cool.

Stir in chillies, garlic and pepper. Add chicken, cover and marinate for 20 minutes.

Thread chicken onto skewers. Heat a non-stick frying pan over a medium heat. Spray chicken with cooking spray. Cook in batches for 2-3 minutes each side.

Place both peas into a bowl. Cover with boiling water and stand for 2 minutes. Drain. Add sprouts and toss to combine.
Step 6 of 6
Prepare noodles as per packet instructions and spoon into bowls. Top with skewers and serve with pea salad.
