  • 20 green king prawns, deveined
  • 1 pinch ground white pepper, to taste
  • 1 handful oakleaf lettuce leaves
  • 1 cup bean sprouts
  • 1 carrot, shredded
  • 1 long red chilli, thinly sliced
  • 1/4 cup coriander sprigs
  • 4 spring onions, thinly sliced
  • 150grams thin egg noodles
  • 1 1/2tablespoons rice wine vinegar
  • 2tablespoons honey
  • 1tablespoons reduced-salt soy sauce
  • 8 free range eggs, whisked
  • 1 1/2tablespoons vegetable oil

Method

Step 1 of 4

Cook noodles as per packet instructions. Drain. Combine honey, vinegar and soy in a bowl.

Step 2 of 4

Heat 2 tsp oil in a frying pan over medium heat. Add prawns and 3 tbs honey mixture and cook for 2 minutes, tossing often, or until prawns change colour and are just cooked. Transfer to a plate and cover to keep warm. Clean pan.

Step 3 of 4

Combine noodles, egg, onion and pepper. Heat 1 tsp oil in frying pan over medium heat. Add a quarter of the egg mixture and cook for 2 minutes or until just cooked. Turn and cook for a further 2 minutes. Transfer to a serving plate and cover loosely to keep warm. Repeat to make 4 omelettes.

Step 4 of 4

Place one lettuce leaf onto one half of each omelette, then top each with prawn, carrot and sprouts and fold omelettes in half over filling. Drizzle each with remaining honey mixture and garnish with coriander and chilli. Serve immediately.
