- 600grams cod loins (150g each)
- 250grams udon noodles
- 4 spring onions, sliced
- 1 handful fresh coriander, leaves only
- 1 lime, cut into quarters (to serve)
- 1tablespoons dark soy sauce
- 1tablespoons clear honey
- 1 fresh root ginger, grated, 2.5 cm piece
- 1 pinch sugar
- 1tablespoons sherry
Method
Step 1 of 3
Preheat the oven to 200°C (Gas 6). To make the teriyaki sauce, put all the ingredients in a bowl, and mix well. Pour all over the fish, and leave to marinate for about 10 minutes.

Sit the fish pieces with the sauce in a roasting tin, and bake in the oven for about 15 minutes, until the fish is cooked through.
Step 3 of 3
Meanwhile, put the noodles in a bowl, and pour over boiling water. Leave for few minutes, then drain and toss with the spring onions and coriander. Serve with the fish and a squeeze of lime.
