- 250grams rice vermicelli noodles, cooked, drained (to serve)
- 2tablespoons fish sauce
- 650grams squid tubes (calamari)
- 1 large red capsicum, quartered, deseeded, thinly sliced
- 2 long red chillies, deseeded, finely chopped
- 1 bunch coriander, sprigs removed, chopped
- 1 red onion, cut into thin wedges
- 2 bunch broccolini, cut in half lengthways, then into thirds
- 1/3 cup lime juice (and extra lime, cut into wedges, to serve)
- 2tablespoons vegetable oil
- 1tablespoons palm sugar, grated (or brown sugar)

Method
Step 1 of 4
Combine lime juice, fish sauce, sugar and chilli in a jug.
Step 2 of 4
Cut along one side of each calamari hood and open out flat. Score the inner side into a diamond pattern with the tip of a small sharp knife, then cut into large pieces.
Step 3 of 4
Heat 1 tbs oil in a wok over high heat. Add calamari and stir fry for 2 minutes or until white and just cooked through. Transfer to a plate and cook remaining portions of calamari.
Step 4 of 4
Heat remaining oil in wok and add onion, broccolini and capsicum. Stir fry for 2 minutes. Add 1 tbs water, stir and cover. Cook for 1 minute or until tender. Return calamari to wok with sauce and stir fry for 1 minute or until heated through. Spoon stir fry onto noodles and top with coriander sprigs and a wedge of lime on the side.
