  • 3 cloves garlic, peeled and minced
  • 1tablespoons smoked paprika
  • 1teaspoons cumin
  • 2 limes, juice of 1, 1 sliced into wedges
  • 2teaspoons maple syrup
  • 1.20kilograms black beans, drained
  • 1/2 bunch coriander, fresh, chopped
  • 40grams jalapeno peppers, drained

Description

These spiced black bean tostadas are packed with veggie goodness and can be ready in minutes.

Method

Step 1 of 4

Pre-heat the oven to 200°C. Brush the tortillas with half of the oil and place on a foil-lined baking tray. Bake for 8 minutes, until crisp.

Step 2 of 4

Heat the rest of the oil in a large, deep pan and cook the onions for 5 minutes. Stir in the garlic and spiced and cook for 2 minutes. Add the lime juice, maple syrup and beans and cook for 2-3 minutes.

Step 3 of 4

Remove from the heat and mash the beans with the back of a fork to a coarse mix.

Step 4 of 4

Spread each tostada with the black bean mix. Scatter with jalapenos and chopped coriander and serve with lime wedges.
