  • 1 large avocado, stoned and chopped
  • 1 clove garlic, peeled and minced
  • 1/2 medium red onion, peeled and diced
  • 1/2 bunch coriander, fresh, leaves picked, chopped
  • 60grams cherry tomatoes, finely diced
  • 30grams jalapeno peppers, drained
  • 1 lime juiced
  • 4-5 lime wedges
  • 2tablespoons olive oil, divided
  • 600grams tuna steaks
  • 12 small tortilla wraps

Description

Rare tuna, creamy avocado and crispy tostadas make for a delicious Mexican feast.

Method

Step 1 of 4

Add the avocado, garlic, red onion, half of the coriander, tomatoes, jalapenos and lime juice to a large bowl and mash well to make guacamole.

Step 2 of 4

Brush half of the oil on the tuna steaks and cook in a large griddle pan on medium high heat for 2 minutes on each side. Rest for 5 minutes and finely slice.

Step 3 of 4

Pre-heat the oven to 200°C. Brush the rest of the oil on the tortillas and lay out in single layers on 2 baking trays. Bake for 5 minutes until crisp and golden.

Step 4 of 4

Top each tortilla with guacamole and sliced tuna and serve with fresh coriander on top and lime wedges on the side.
