- 1 red capsicum, deseeded, thinly sliced
- 1 red onion, thinly sliced
- 6 long crusty bread rolls
- 1/2 cup barbecue sauce
- 1tablespoons balsamic vinegar
- 60grams baby rocket
- 500grams Italian-style pork sausages
- 1/2 cup bocconcini, sliced
- 1 clove garlic, crushed

Method
Step 1 of 3
Heat a large frying pan over medium-high heat. Cook sausages for 8-10 minutes, turning regularly, or until evenly browned and cooked through. Remove from pan. When cool enough to handle, slice thickly.
Step 2 of 3
Using the same pan, increase heat to high. Cook onion, capsicum and garlic for 5 minutes, stirring often, or until vegetables soften. Stir in sauce and vinegar, and simmer for 2 minutes.
Step 3 of 3
Partially split rolls. Fill with rocket, sausage and bocconcini. Drizzle over sauce and serve.
