- 500grams sausages (any type beef, chicken or pork)
- 1 knob butter
- 1 large onion
- 2-3 clove garlic
- 1 bacon rasher
- 1 capsicum
- 1 red or green chilli (optional )
- 1 can diced tomatoes, diced
- 1/2 cup stock (vegetable, beef, or chicken)
- 1tablespoons italian mixed herbs
- 1 can butter beans, drained (or other type)

Description
This is a raid the fridge, raid the pantry, hash up. A tasty meal from what you have on hand. Quick and easy in one pot.

Step 1 of 3
Gather the ingredients you have on hand, the above is what I had. Add a little oil to a large pot on medium heat,put the sausages in and gently brown, turning a few times, meanwhile while they are browning, roughly chop the onions, chop the garlic, dice the capsicum. Roughly dice the bacon. Drain the beans and slice the chilli if using.

When sausages are browned and cooked through, remove to a plate, drain oil from pan. Add butter and onions, garlic, capsicum,bacon and chilli.turn heat up a little and cook till onions soften, about 5 minutes. Meanwhile cut sausages into bite size pieces. Add the tinned tomatoes, stock, and herbs. Bring to boil and simmer for 5 minutes. Return sausages to pot. Add the tinned beans and gently stir through. Reheat. Season to taste.

Serve as is with toast or crusty bread, mashed potatoes or pasta, or whatever. I served mine with herbed mashed potatoes and broccolini.
