  • 500grams turkey mince
  • 1 egg
  • 40grams parmesan cheese
  • 40grams breadcrumbs
  • pinch salt
  • pinch mixed italian herbs
  • 4-5teaspoons Woolworths cranberry sauce
  • 100grams Thomas dux triple cream brie

Description

An easy meatloaf, not just for Christmas time!

Method

Gather all the ingredients

Cut a large rectangular piece of baking paper

Step 3 of 17

In a bowl, mix the turkey mince, Parmesan cheese, breadcrumbs, the egg, some salt and the Italian herbs.

Step 4 of 17

Transfer the mix onto the middle of the baking paper, cover it with the sides of the paper, and slightly flatten it with your hands, making a rectangle. (Mine was around 20x30 cm)

Unwrap the meat

Spread cranberry sauce on the top

Arrange the brie on top of the sauce, in slices

Using the baking paper as an aid, roll the meatloaf in on itself from the shorter side, peeling the baking paper away from it as you do so. Stop rolling a little before the end.

It will go in a loaf pan around 20 x 10 cm

Keep using the baking paper (it's a lot easier than using your bare hands) to fold the other short side on top of the rolled sector in order to close it

Envelop the meatloaf in the used baking paper

Transfer it into the loaf pan as it is

Bake for 45 minutes, in preheated oven at 180 degrees

Remove loaf pan from the oven and lift baking paper

Step 15 of 17

There will be liquid, hot, so be careful! Gently lift and tilt the baking paper and let the liquid drop into the loaf pan. Move meatloaf to serving dish.

At this point (optional) you may spread some more cranberry sauce on top
