- 1tablespoons canola oil
- 2 cloves garlic, peeled and minced
- 5centimeters ginger, peeled and chopped
- 12 scallops, shelled, fresh
- 200grams tenderstem broccoli, halved
- 4 spring onions, sliced
- 200grams kale, destalked, chopped
- 4tablespoons sweet chilli sauce
- 3tablespoons coriander, fresh, chopped
- 1 medium lime, juiced
Description
Scallops are the perfect quick-cook protein for a speedy stir fry.
Method
Step 1 of 3
Heat the oil in a large non stick pan or wok and cook the garlic and ginger for 2 minutes. Add the scallops and cook for 1 minute on high heat. Remove from the wok with a slotted spoon and set aside.
Step 2 of 3
Add a drizzle of oil into the pan and cook the broccoli and spring onion for 3-4 minutes, stir in the kale and cook for 2 minutes until wilted, adding a little water as necessary.
Step 3 of 3
Pour over the sweet chilli sauce and add the scallops back into the wok and cook for 1 minute. Top with fresh coriander and a squeeze of lime and serve.
