  • 400grams jasmine rice, rinsed
  • 3/4 cup coconut milk
  • 2 stalks lemongrass, sliced lengthways
  • 1 small cucumber, sliced
  • 100grams peanuts
  • 100grams anchovies
  • 2tablespoons sugar

Description

A Malaysian coconut rice dish with a deviously savoury peanut and anchovy topping.

Method

Step 1 of 4

Cook the rice as per packet instructions with the lemongrass and then drain the excess water.

Step 2 of 4

Add the coconut milk to the pot and cook for 8 minutes while constantly stirring so the rice does not stick.

Step 3 of 4

Heat up a non-stick pan and add the peanuts, anchovies and sugar and fry for 5 minutes while tossing.

Step 4 of 4

Once the rice is cooked, remove from the heat and serve with the peanuts and anchovies to top.
